I've been a vegetarian for about 20 years. My husband prefers lots of meat and cheese with his meals. I'm always in search of quick and easy vegetarian recipes that he'll eat, which is like looking for that proverbial needle in the haystack. I didn't have a lot of hope with this book, since it's vegan, which is even more limited for his tastes. I'm thrilled to say the few recipes I've made from this book so far have been a huge hit with both of us!I like using the slow cooker. I can get everything chopped and put together in the early morning. If I know I'll be busy in the morning, I can chop the veggies and get things ready the night before. Then, at the end of the day, the meal is ready and there is no work to be done.
The recipes are fairly simple. The only time-consuming part is the chopping of vegetables.
Only a small percentage of the recipes have accompanying photos. While the photos are always nice, mainly because it's a quick and tempting visual, I don't find them necessary.

This book contains some very good and easy vegan recipes; we enjoyed the basic bean chili, especially, and plan to make it, varying the vegetables as suggested, many times in the future.I am being generous, however, by not docking the book more than one star for containing several recipes that are not made in the slow cooker. I have enjoyed the meals I have cooked using the recipes in this book. I would recommend the book to those looking for ideas.
If you like exotic dishes, such as curries, or are interested in protein rich dishes, but are on a budget, give this book a try. Grains in stews or soups are a great way to fill you up and adding beans as a protein source is not only tasty, but also saves you often money compared to a traditional meat dish. I found this book to have easy to follow recipes that did not require a lot of specialized ingredients. I prefer pantry items in recipes since I know I will use up whatever I buy before the expiration date.
I can highly recommend this book to anyone that loves a slow cooker, wants to cook healthy meals and has to stay on a budget. If any one or all three of these fit your bill, then this book is for you!

There are a lot of recipes here. Not all of these recipes are slow cooker recipes. Also there are many recipes in here that require making another recipe from this book as an ingredient in them. This might not be a problem for some people. I, however, only have one slow cooker and use it to save time. It would defeat my purposes to have to use the slow cooker for 6-8 hours to make a garlic sauce that is an ingredient needed in a main dish that I will have to also cook a

I've tried a few of these recipes and am kicking myself for cooking them in the first place. Brussels sprouts slow cooked for 8 hours...why did I think that could make sense?! If the recipe doesn't call for ingredients that are completely separate recipes that take hours and hours to cook, then the taste is either non-existent or wrong. My husband and I just threw out the Brussels Sprout Curry which is such a tragic waste of food. Unfortunately we w

Nothing new and nothing to separate this book from dozens of others.
This book was not well backed. Only a dozen pictures for the entire book.
Would love to have a book from this author giving me more adventurous recipes from them. They certainly cook the way I eat.
We switched from Keto diet to plant based and I no longer knew what to cook. The recipes in this cookbook are super easy to prep and the ingredients easy to find in the store. My husband grew up on southern cooking and he absolutely loves every dish from this cookbook.
Some of these recipes are pretty basic, I was surprised to see so many salad recipes and things that were Mexican or Indian 'inspired'. Overall I wasn't wowed, but there is a variety of recipes.

Almost every recipe was very carb heavy, and none of the nutritional information so kindly provided included carbs, so you even have to figure that out for yourself.

Love the basic filling ingredients used with crockpot. Variety of delicious cost effective recipes. Highly recommend for those new to the vegan lifestyle.
This was refreshing. It's so easy to get bogged down trying to make meals that are vegan. I like the quick and forget attitude.
